Neurogastronomy
Neurogastronomy is based on the knowledge that the gastronomic experience and enjoyment are shaped by the multimodal perception of ourselves while eating. This means that all of our individual sensory perceptions influence our own processing in the brain, leading to enjoyment and experience. This shifts the focus away from the food towards its effect on the person. What we perceive – taste, hear, smell, sight and feel – meets personal identity, our emotions, memories and consciousness. Not only the food, but also the surroundings and our feelings influence the gastronomic experience.
